Chamomile is best steeped covered as valuable volatile oils will be kept in the brew. Herbal teas, called Tisanes, are not teas at all, but infusions of various herbs, flowers, and spices, rather than Camellia Sinensis leaves.

1 teaspoon to each cup of water; Steep about 5 minutes or so to suit your taste.
